Roasted Red Peppers

I read another food blog where the author ranted and raved about this particular brand of roasted red peppers in a jar.  They were “sooo good,” blah blah blah.  You know what’s way better? Roasting them yourself.  
 
 
Seriously. Look how gorgeous these peppers are.  Ok, so the two of them cost me $6 at New Seasons, but look at how pretty they are!  
 
 
They’re even prettier washed and cleaned.  
 
Pre heat oven to 400 degrees, put peppers on a sheet pan and let roast in oven for 40-45 mins, turning a couple of times.  Usually when the skins are loose and have some slight char is when I take them out. 
Yum.  Cool and then peel the skins off and then they’re ready to use for hummus or they can sliced, topped with a really good olive oil and served, or jarred with olive oil and saved for another day.
